YOU'LL NEED... 1/2 kilo ricotta 1 egg 3 heaped tblsp pecorino 3 heaped tblsp breadcrumbs Handful of chopped parsley Broth: Salt & Pepper, 3 brances of parsley, 6 roma cherry tomatoes (cut in half), Water LET'S GET COOKING... Beat the egg. Squash the ricotta and add the egg. Add the pecorino, breadcrumbs and parsley and mix well. Make small to medium sized balls using the mixture. Put water into a saucepan with oil, salt and pepper, cherry tomatoes and parsley. Bring it to boil and lower the temperature. Add the balls and let them simmer. Make sure they are only half covered by the water. Cover the saucepan and leave to cook for 20 minutes or until tender.
